Vegan Chocolate Cherry Granola Recipe

What’s better than a lazy Sunday morning spent in PJs and fuzzy socks? A lazy Sunday morning spent in PJs and fuzzy socks with the smell of freshly baked Chocolate Cherry Granola wafting from the kitchen.

If it sounds too good to be true, I can assure you it isn’t. This recipe is incredibly quick, simple, and delicious. Ready in less than 20 minutes, this gluten-free, vegan chocolate granola is the perfect addition to your Sunday morning routine and can be made in a big batch, stored in an air-tight container, and enjoyed throughout the busy week ahead.

Here’s What You’ll Need:

  • 2 cups Old Fashioned Oats
  • 2 tbsp melted coconut oil
  • 3-4 tbsp real maple syrup
  • 2-3 heaping tablespoons coco powder
  • 1 tsp cinnamon
  • 1/4 c crushed walnuts
  • 1/3 c dried cherries
  • 1/3 c vegan dark chocolate chips

*** Puffed rice and/or quinoa can also be added for additional crunch and texture

In a large mixing bowl, combine melted coconut oil, maple syrup, and coco powder until well combined. Gradually add oats, stir until well coated with chocolate mixture.

If the mixture is too thick, add more maple syrup.

Transfer oats to a parchment paper lined baked sheet, add crushed walnuts, and sprinkle with cinnamon. Spread into an even layer and bake at 375 for about 15 minutes or until oats are crispy.

It’s important to flip halfway through to ensure even baking. The maple syrup can burn quickly, so keep an eye on it.

Let granola cool, add dried cherries and chocolate chips and serve with sliced bananas, frozen cherries, and almond milk or sprinkle over smoothie bowls or banana “nice cream.”
