Easy Quinoa + Kale Salad Recipe

Dressing:

  • I large avocado (or two small)
  • 1 tsp sesame oil
  • 1 tbsp Sriracha sauce
  • 1 lemon, juiced
  • salt and pepper to taste

Salad:

  • 1 large bunch of kale, de-ribbed and torn into bite sized pieces
  • 1 cup cherry tomatoes
  • 1/4 cup finely diced red onion
  • 3 tbsp chopped walnuts
  • 1/4  quinoa

Screen Shot 2015-11-12 at 5.18.17 PMBring 1/4 dry quinoa and  3/4 water to a boil. Cover and let simmer for about 15 minutes until all of liquid is absorbed. Fluff with a fork and set aside to cool.

In a large mixing bowl, mash avocado and add sesame oil, Sriracha, and lemon juice. Stir until well combined.

Add kale and massage by squeezing the mixture with your hands and pressing the leaves with your fingers. You will notice the leaves become shiny and turn a brighter shade of green. Continue for about a minute until the leaves look wilted as though they’ve been cooked

Then add cherry tomatoes, onions, walnuts, and quinoa and toss to combine.

Season with salt and freshly cracked pepper to taste and serve.
